One kitchen.

Every dish at Paradise comes off one of three sources of heat — chargrill, tandoor, or slow-pot. Here's how each one works.

01 · Dum

Hand-sealed biryani.

Hyderabadi dum biryanis sealed with dough and steamed slow until the rice carries the meat. Forty minutes a pot — no rushing, every time.

02 · Tandoor

Whole fish, clay oven.

Tandoori marinade overnight, cooked in minutes at 480°. Whole fish, kebabs, naan — anything that asks for char and crust.

03 · Kadai

Onions, capsicum, hand-pound spice.

Tempered in the kadai with whole spices, onions and capsicum until the gravy clings. Served straight from the iron pan.
